Dark Balsamic Vinegar – Traditional
Dark Balsamic Vinegar has gained popularity in the culinary world relatively recently. However, the ingredient actually dates as far back as 900 years ago.
Originally made in Italy, balsamic vinegar is still made today by using a similar process as it was back then. Only two regions can lay claim to authentic balsamic vinegar. First, is Modena. Second, is Reggio Emilia. Ours come from the former.
The steps to make our Traditional Dark Balsamic Vinegar (in simplest terms) are as follows. Firstly, organic grapes are crushed whole. Secondly, the grapes are boiled down into a syrup. Thirdly, the syrup is fermented and aged in oak barrels. As a result, the oak barrels add incredible character and depth of flavor to the vinegar.
As the vinegar continues to age, the vinegar thickens and becomes more and more flavorful. Then, we add organic wine vinegar. This adds a slightly tangy flavor that balances out the sweetness from the grapes.
