Fries are my weakness. Really, any type of potato.
From fast food favorites such as McDonald’s, to the plethora of do-it-yourself versions you can find online from both amateurs and professionals, there’s no shortage of different varieties one can explore to find their favorite.
My favorite is one I’ve found from one of my favorite cooking shows, America’s Test Kitchen.
Naturally, after releasing my Flower City Flavor Company Bourbon Barrel Malt Vinegar, aged in barrels from Iron Smoke Distillery, I needed a recipe to showcase the traditional way to incorporate malt vinegar.
I created a masterful, yet simple, recipe that will make you never skip out on french fries again with this malt vinegar.

The Merriam-Webster dictionary definition: a mayonnaise flavored with garlic and sometimes other ingredients (such as red pepper).
My own definition: A garlic lover’s dream come true!
Aioli has increasing become popular on gourmet burgers. I’m talking the type of burger you would find at both fast-casual, and higher-end restaurants.
There’s even a restaurant and food truck in Arizona named Aioli Burger that specializes in having different varieties of aioli in their burgers!
This doesn’t mean that aioli has to be limited to just be enjoyed when you are out with family and friends.

This recipe is crafted with my own Bourbon Barrel Malt Vinegar.
I feel my version brings a distinctive brightness to the aioli overall compared to the generic store bought brands.

2.5 lbs Russet potatoes, scrubbed clean
1/4 cup Arbequina Estate Grown Extra Virgin Olive Oil
1/4 cup Bourbon Barrel Malt Vinegar
1.5 tsp smoked paprirka
1.5 tsp salt
1/2 tsp black pepper
1. Cut potatoes into 1/4-inch wedges.
2. Combine potatoes and the rest of the ingredients in a large bowl until well combined.
3. Spread the fries out evenly on a baking sheet. Bake in a 450-degree oven for 35 minutes, flipping over halfway through.
4. Let the fries cool and drain on a paper towel for five minutes, then serve with Malt Vinegar Aioli.
